This delicious side dish is good served warm or cold.  A nice cold salad for a hot summer’s eve or a warm rice dish during the fall.


  • 2 cups uncooked wild rice
  • 1 large mango
  • 4 plum tomatoes
  • 1/2 sweet onion
  • 2 medium avocados
  • 1/4 cup lime juice
  • 1/2 cup chopped cilantro
  • 1 tbsp olive oil
  • 1/2 tsp cumin
  • salt and pepper

Cook the rice according to instructions. (1 cup uncooked rice and 3 cups water, generally)

In a large bowl, combine rice, diced mango, diced avocado, diced tomatoes, chopped onions, and cilantro.

In a small bowl, whisk together lime juice, olive oil, and cumin.  Pour this dressing over the rice mixture and gently stir until well combined.  Season with salt and pepper.

Serve hot or chilled.
